Can I still pay my Mother’s house payment after the probate process is over?

uh…depends on a ton of things. Can you keep a USDA loan that is not in your name? No.
If the estate does not have enough assets to pay off the mortgage, you will either have to re-fi in your name or sell to pay the morgage.
You need to talk to the executor of the estate
